Amie is a Manhattan based Personal Chef, Whole Living Expert, Professional Recipe Developer and Food Writer specializing in simple Gluten-Free ‘Clean’ recipes for the home cook.
It was six years ago this month that my legs started swelling with 20 lbs. of water weight every day. It took 5 ½ years to figure out what was going on inside my body. After exhausting every doctor on the East Coast, as well as venturing out to the Mayo Clinic, I had no answers. What I did have was a ton of hope and positive energy.
Countless bone marrow biopsies, CT scans, and blood tests later, I had every doctor stumped. So I decided to take matters into my own hands. I quit my corporate job and followed my passion for helping people enjoy the goodness of clean, naturally gluten-free foods through exploring Integrative Medicine. And here I stand today with no leg swelling and a big smile.
What got me through the past six years? My passion, my pride, my yearning to find an answer and help people just like me to never give up and keep digging for an answer and solution- not a Band-Aid to cover my symptoms.
Now that I am on my path to healing, I am out to change the world, sans gluten! I started my website and blog, The Healthy Apple, when doctors told me I was crazy and I couldn’t heal myself through food, that I shouldn’t avoid gluten or dairy, and that I was a medical mystery.
The Healthy Apple is about me, my life, my feelings and my food. It’s my passion. I made a pivot in my life, followed my dream and learned it’s okay to move in a different direction than the one we are going in – if we feel stagnant and ready for change.
My rocket fuel is my passion to help people. This is my platform to build a voice. We are all here to inspire each other. I’m thirsty for something that makes an impact, and I’m doing my best to be a role model to teach others how to eat clean and understand what processed foods are doing to our bodies. It’s easy to have a bad experience with cooking and be turned off, but I want to take that away. That’s why I created my personalized food store tours, pantry makeovers and personal chef work here in Manhattan as well as worldwide via Skype. I spent many years in corporate America daydreaming of what life would be like to help others who were struggling with their health – when they didn’t know where to turn, who to ask or where to go.
Then, I met one of my best friends, Silvana Nardone. Together we launched Easy Eats online gluten-free magazine and we’ve teamed up to show to the world that it’s good to be gluten-free.
I’m just a simple gluten-free gal living in the heart of Manhattan – living proof you can follow your dreams. Because that’s what life is all about. Feeling good and doing what makes you happy. That’s what I did, and with everything I’ve been through with my health, I’ve learned life’s too short not to enjoy each and every day.
